Beyond wedding jewelry and the like, another fantastic opportunity for mixing cultures is with the wedding food. Here are some great suggestions for an international array of wedding hors d'oeuvres.

Exploring different cultures and traditions through food is one of the best parts about weddings. The foods need not be from your own cultural background or heritage. One very modern approach to the cocktail hour is to offer guests a variety of appetizers from all around the globe. It can be set up in stations, with each one representing a different region or type of cuisine. Your guests will really enjoy snacking their way around the world in the course of an hour or two.

Asian food is very popular and it makes a great place to begin planning your international wedding hors d'oeuvres menu. Fried wontons with little dipping sauces are a sure-fire hit. French cuisine has long held a reputation as the pinnacle of culinary delights, and it also has many hors d'oeuvres which would be ideal for an international selection of appetizers. The word hors d'oeuvres itself is French, after all. There are any number of French appetizers, ranging from delightful canapes to crispy cold crudites to luscious cheeses served with fruit. For passed hors d'oeuvres, you might consider croutons topped with foie gras and caviar, artichoke hearts filled with chicken mousse, and smoked salmon on croutons. French cuisine also lends itself to a fabulous spread at a wedding reception station. The centerpiece can be puff pastry wrapped baked Brie with apricots. Other additions to the station can include an assortment of French goat cheeses and pates with crackers.

This is only the tip of the iceberg. Your guests will love these delicious roll ups featuring ham, cream cheese and ranch dressing.

2 (8 oz.) pkgs. cream cheese, softened

1 envelope ranch salad dressing mix

3 green onions, chopped

11 flour tortillas

22 thin slices deli ham

Directions

In a small bowl, combine the cream cheese and the ranch dressing mix and beat until smooth. Add in the onions; mix well. Spread 3 tablespoons over each tortilla. Top with two ham slices.

Roll up the tortillas tightly. Wrap tortillas with plastic wrap. Refrigerate until firm. Unwrap and cut into 3/4-inch slices.

Makes about 90 servings.

12 hard cooked eggs

1/2 cup mayonnaise

Directions

Slice eggs in half lengthwise and remove the yolks. Set aside the egg whites.

In a small bowl, mash up the yolks. Stir in the mayonnaise, bacon, cheese, mustard and pepper. Spoon (or pipe with pastry bag) yolk mixture into egg whites. Refrigerate until ready to serve.

Makes 24 servings.

1 (8 oz.) pkg. cream cheese, softened

1/4 cup mayonnaise

2 tablespoons lemon juice

1/8 teaspoon pepper

1/8 teaspoon hot pepper sauce

2 cups cooked chicken breast, finely chopped

2 hard cooked eggs, finely chopped

1/4 cup green onions, sliced

Diced pimientos and additional sliced green onions

Assorted crackers or snack rye bread

Directions

In a small bowl, combine the cream cheese, mayonnaise, lemon juice, salt, ground ginger, pepper and hot pepper sauce; mix well. Stir in the chicken, eggs and green onions.

Shape into an 8x2-inch log.

Garnish with pimientos and onions. Cover and chill. Remove from the refrigerator 15 minutes before serving. Serve with crackers or bread.

Makes 3 cups.

2 medium onions, thinly sliced

3 tablespoons butter

2 tablespoons brown sugar

1/2 teaspoon white wine vinegar

1 sheet frozen puff pastry, thawed

4 ounces Brie or Camembert cheese, rind removed, softened

1 to 2 teaspoons caraway seeds

1 egg

2 teaspoons water

Directions

In a large skillet, cook the onions, butter, brown sugar and vinegar over medium low heat; cook until the onions are golden brown, stirring frequently. Remove with a slotted spoon; let cool to room temperature.

On a lightly floured surface, roll puff pastry into an 11x8-inch rectangle. Spread Brie over pastry. Cover with the onions; sprinkle with caraway seeds.

Looking to add a little "ooh la la" to your wedding? Trying to put together a reception with that perfect "je ne sais quoi"? Why not give your wedding a chic European flair with these fabulous French-inspired wedding details? The results are sure to be "magnifique"!

When planning a wedding with French details, the only place to begin is with the wine. Make your wedding an event to remember by serving a flight of fine French wines with dinner. What that means is that a sommelier pairs each course of the meal with a wine which is the perfect complement to the food. It is a truly fine way to present an elegant dinner. Another idea would be to have a tasting of a selection of French wines during the cocktail hour, led by a wine expert. If you want to carry this theme farther, have your rehearsal dinner at an elegant wine bar (most will have private rooms for hosting parties). Naturally, French Champagne will be a priority for any Francophile's wedding!

The food will be one of the highlights at a French-inspired wedding. You can really make a splash during the cocktail hour with passed hors d'oeuvres such as canapes and mini quiches and stations overflowing with French cheeses (Brie in puff pastry!) and fresh baguettes. For dinner, consider serving classic French fare like escargots, poulet a la Provencale (chicken sauteed with white wine, capers, garlic, leeks and tomatoes), or filet mignon (make it special by topping it with a tasty French sauce). Small trays of French pastries would be a wonderful dessert course. Follow with either a regular tiered wedding cake with a French design such as fleur-de-lis, or opt for the authentic French wedding cake, the croquembouche.

Little French touches can be infused throughout the rest of the wedding. The bride can wear a gown made from French lace paired with glamorous bridal jewelry. Can't afford Cartier for your bridal jewelry? Then take your inspiration from another famous French designer, Coco Chanel, and wear fabulous fakes or ropes of layered pearls. Hair should be chic and sophisticated, and naturally a classic French manicure would be the perfect beauty treatment.

Music is a wonderful way to convey a mood at a wedding, so why not treat your guests to classic French songs such as those by Edith Piaf, the beloved French chantuese. In addition to her well known version of "La Vie en Rose", she has a range of upbeat songs such as "Milord" to get guests in the mood to dance. Speaking of roses, the sophisticated and romantic flower would make a lovely decoration for the reception tables.

Bring French accents to your wedding wherever you can. Vintage postcards of Paris would make marvelous save-the-date cards. Splits of French Champagne or wine could be the wedding favors, perhaps personalized with a tag reading "merci". The style and romance of France is a wonderful source of inspiration for a memorable and chic wedding.
